1. Salts of alginic acid

Sodium Alginate - thickener, stabilizer

(1) in meat products: Hot irreversible gel water retaining agent, fat replacer, Embrittlement agent, calcium alginate casing

Use alginic acid and calcium ions to form the properties of irreversible gels. It is used in ham sausage to improve the quality and sliced performance of the meat product, in fat -based products as fat replacer, meeting low -fat demand, improving product quality and taste. In meatballs, it can significantly improve the brittleness and elasticity of the product. In barbecue and fried meat products sodium alginate can reduce the loss of juice during cooking and make the product's fleshy and tender.

By promoting the formation of gluten networks, improvement of the organizational structure, sodium alginate can increase the elasticity of noodles and prevent the skin of noodle products from cracking. It is used in noodle products such as frozen fresh noodles, instant noodles, and has strong affinity, adhesion, increased the strength and ductility of the noodles, and improving the shelf period and cooking resistance. In frozen products like dumplings, it can prevent from frozen surface collapse, increase the translucentness of dumpling skin, increase elasticity and smoothness, and reduce the damage rate of the product.

(3) ice cream: anti -freezing, ice crystal, excellent thickening stabilizer

Using the excellent thickening stability of sodium alginate, the product taste is smooth and mellow. It is used in cold drinks to improve the expansion and fusion of the product, no stickiness and stiffness, and significantly improve the quality of the product.

Used as a thickener, a stabilizer, an emulsifier, and a gel agent, according to the regulations of GB2760-2011, it is used appropriately in food according to the needs of production.

4. seaweed active extract

(1) fucoidan

Appearance: It is white to yellow -brown powder, with the unique smell of color and brown algae, which is dissolved in water and shows a transparent solution.
